From what I have read on cheese making, there are specific bacterias that are available to purchase that are added in to the cheese at a certain point. The cheese I usually get is the cave aged from Trader Joe's. There is nothing about it being GF but there is also nothing in the ingredient list that has anything to do with bread. I love the use of bacon with both the cheddar and "stinky" cheese, that's really good.<br />I do have a question about the cheese though: Are you able to find a gluten free blue cheese? I know there must be some out there, but a lot of blue (and Gorgonzola) is made by adding bread or bread product to the cheese and letting that mold. Unless the cheese maker set out to make it GF, I typically assume it has gluten.
